
Pork Fillet with creamy Spinach, truffle Egg and Oyster mushrooms
I Marinate Pork fillet ( Olive Oil and Soya Sauce - 30 min plus). Pan fry slowly, leave it pink inside. Pour boiling water over the Spinach , drain and cut. Pan fry on low heat a finely cute small onion and a bit of a garlic in a large sauce pan, add the spinach, add crème fraiche, season with salt and pepper and use a blending stick and mash the above.
Pan fry Oyster mushrooms in Olive Oil, add a reduced sauce from white wine, sherry, vegatable soup and creme fraiche and
let it simmer. Season with white pepper, salt and Truffle oil.
Pan fry the egg in butter-slowly- and season also with truffle oil.
If you are able to get fresh truffles, then dont use the truffle oil, slice the truffles over the egg and mushrooms.
